Archway Raspberry Filled Cookies 1 C Crisco 2 C brown sugar 2 eggs 1/2 c. sour milk or buttermilk 1 t vanilla 3 1/2 C flour 1/2 t salt 1 t soda 1/8 t cinnamon Mix shortening, sugar, & eggs until fluffy. Stir in milk & vanilla. Sift in dry ingredients and add to first mixture. Place 1 t of batter on ungreased cookie sheet. Place 1/2 t of seedless rasp. jam on batter. Then 1 t of batter on top of jam. Bake 375 degrees for 10-12 minutes. cooks.com
These are very similar to those butterball Christmas cookies that I always remember around the holidays. However, these use CASHEWS, which really add a wonderful flavor! I made these for Christmas cookies in and they were, by far, everyones favorite!
