If you cannot make or get a hold of some of the real thing (clotted cream is hard to make) here is a nice substitute recipe I found:  4 ounces mascarpone  1 cup (240 ml) heavy whipping cream  1 teaspoon pure vanilla extract  1 or 2 tablespoons granulated white sugar  Zest of lemon or lime (optional)
