Galatoire's Tartar Sauce: Ingredients ― 2 egg yolks; 1 Tbsp Dijon mustard; 1 Tbsp fresh lemon juice; 1 Tbsp Champagne vinegar; 1½ cups vegetable oil; 2 Tbsp dill pickle relish; 2 Tbsp petite nonpareil capers, drained; salt and white pepper. Instructions ― Whisk together the egg yokes, Dijon, lemon juice and vinegar; emulsify with the oil, making a mayonnaise. Fold in the dill relish and capers. Add salt and white pepper to taste. Chill until needed.
