Tilapia w/Black Beans & Corn. Combine 1 can black beans, drained & rinsed, 1 can Rotel, drained, 1 cup frozen whole kernel corn, 1/3 cup sliced green onions, 2 T oil, 1 T cider vinegar. Season fillets with salt, place in med-high skillet, cook 3 min, turn over, cook 2-3 min more until fish flakes easily. Transfer to serving platter and top each w/about 3/4 cup bean-corn mixture. I think I'll use Cajun seasonings instead of salt and add a cilantro-chipotle dressing.
