Kirsten here from @BuckNakedPaleo with a copy-cat patatas bravas from one of my favourite tapas places. Traditionally it's a tomato based sauce. I switched it up and made a roasted red pepper sauce. Extra sauce? Use it on other proteins/veggies during the week! My fam jam LOVE these. We squeeze homemade Mayo over them and add parsley but that's optional! (I highly suggest doing it though..)white potatoes get a bad rep but they're actually loaded with potassium, have lots of fiber, magnesium, vitamin B6 and half our daily value of vitamin C! Into it. # Smashed Potatoes with Roasted Red Pepper Sauce (& Mayo) @Bucknakedpaleo # Ingredients: # For the roasted red pepper sauce: 1 Tbsp extra virgin olive oil 1/4 of a Small Onion, Finely Diced (approx 1/4 cup) 3 cloves Garlic, Minced 1 jar Compliant Roasted Red Peppers, Drained And Roughly Chopped Salt and Ground Black Pepper to taste 2 Tbsp full fat coconut milk (optional, but makes it creamier) # For the roasted potatoes: 24 oz bag yellow baby potatoes(or more) 2 tablespoons olive oil salt and pepper # Method: FOR ROASTED RED PEPPER SAUCE: ADD olive oil to a medium skillet over medium-high heat. Add onion & garlic and saute for 2 to 3 minutes until softened. Add the chopped red peppers and cook for 2 to 3 minutes, until warmed through. TRANSFER the cooked mixture to a blender, purée until blended and smooth POUR purée back into the skillet. Add salt, pepper, and coconut milk and stir to combine. Taste and add salt and pepper as needed. Let reduce on low to thicken. # FOR THE SMASHED POTATOES: PREHEAT oven to 450 degrees F. Line a large baking sheet with parchment paper. BRING a large pot of water to a boil. Add potatoes, and cook until tender, about 15-20 minutes; drain well. PLACE potatoes onto the parchment lined baking sheet. Using a fork (or potato masher), carefully smash the potatoes until flattened but still in one piece. DRIZZLE with olive oil and season with a sprinkle of salt and pepper. PLACE into oven and bake for 18-20 minutes, or until golden brown and crisp. SERVE immediately with roasted red pepper sauce. Add compliant/homemade mayo and fresh parsley if you'd like. # #Whole30 #Whole30recipes
