While Palomino Fino grapes reign in Jerez it would be remiss to not also celebrate Moscatel and Pedro Ximénez seen here. Pedro Ximénex or PX is both the name of the grapes and the style of wine it creates. Its made by drying overly ripe grapes in the sun concentrating their natural sugars and acidity.
