Aalsuppe is ita soup made with eel? ( Aal= eel & Suppe = soup). Actually it refers to alles or everything, (everything goes in it). It is made with meat bones to create a broth, dried fruit for a slightly sweet taste, stew vegetables, vinegar for a sweet and sour taste and a herbs such as parsley, thyme, marjoram, sage, chervil, mint, dill, sorrel and basil. Some add dumplings. Aalsuppe does not have to contain eel, but most add pieces of smoked eel, eel cooked in wine, or Monkfish.
