9 · This Easy Vegan Kimchi is packed full of flavour and also of course, good gut bacteria from the fermentation process. It's my favourite korean banchan (side dish) along with some beansprout salad!This easy vegan kimchi is inspired by mat kimchi 맛김치, that's usually made by pre-cutting the cabbage first before turning it into kimchi to ferment. Mat kimchi can also be eaten fresh.


  • 1/2 Carrot and/or radish, medium
  • 5 cloves Garlic
  • 1 small knob Ginger
  • 1 cup Green onion or scallions

Vegan Kimchi Noodle Soup - Full of Plants

10 · 25 minutes · Vegan kimchi pancakes or kimchi-jeon are my personal favourite. I honestly love kimchi so much and I was so happy I got to recreate and veganize one of my favourite dishes I grew up enjoying from korean restaurants here. Kimchi-jeon is basically made with kimchi and a little scallions as base—it’s thinner than pajeon but packed with so much flavour from the kimchi! I highly recommend using really fermented kimchi that really packs a flavourful punch.
