In a small saucepan, combine ½ cup honey, ½  cup water and 1 1-inch piece of ginger. Bring to a boil, then reduce to a simmer and stir. Let simmer for 35-40 minutes. Pour the syrup through a strainer into a jar. Discard the ginger pieces and let the syrup cool before sealing the jar. This simple syrup is delicious in cold brew or iced coffee. Enjoy!
