Amazing Apple-Cinnamon Chicken Salad from the Omni Diet.  This is a light and fruity, nutty chicken salad recipe.  I doubled it here and actually used vegan mayonnaise.  I added a few extra teaspoons of mayo to make it thicker and used green apples and black and golden raisins.  I didn't grill the chicken but pan-fried it instead.  It's a nice light healthy lunch or dinner and easy to prepare.
