It depicts one of the versions why all of Shiva, or at least his throat, is blue. During the churning of the ocean myth, when the devas and asuras temporarily worked together to reveal the nectar if immortality, a poison was a by product. It produced poisonous and toxic plants and animals. Shiva consumed most of it, transmuting it but turning himself or his throat blue in the process.
