Laban Seigmenn ahahaha I had forgotten about these guys LOL  When I was a russ one of my dares was to kiss a police man and I did so I got to tie a seigmann into my tassel on my cap.  I still have it too in a memory box somewhere.  I got three knots in my cap too :o)

Sheep's Head is first and foremost before Christmas food in Western Norway. It was common that the first sheep's head meal was held first in November. Latest sheep's head were eaten last Sunday before Christmas. This day was called Skolte Sunday (head or face Sunday). In many communities, it was tradition with sheep's head Skolte Sunday and still is to day. The picture shows sheep's head (smalahove) served with mutton sausage and mashed rutabaga.

I am addicted to this Norwegian cheese. SO far only found at Whole Foods. On the expensive side but the caramelly taste.
