Vegan spinach alfredo. - not a huge fan of vegan foods or spinach ...but this sounds good!

I would used veggie broth instead of pasta water (not so gentle on the stomach) and gluten free pasta so that my mom can have it. I would also use fresh instead of frozen spinach and probably use A LOT more.

RAW VEGAN Pasta:  - Spiralize 1 zuchinni for the “pasta”    **For the sauce:    - I blended the following ingredients in my mini blender/chopper:    - 2 Tablespoons oil packed sun-dried tomatoes, 2Tablespoons olive oil, 1/3 of a garlic clove, a couple dashes of salt and pepper.     - Chop up some tomatoes and add them to your bowl of zuchinni pasta, pour your sauce over and enjoy.
