Butterbeer Non-alcoholic (serves 4-6)1 pint vanilla ice cream1/4 cup butter, softened1/2 t. butterscotch extract1/4 cup brown sugar1 t. ground cinnamon1/2 t. ground nutmeg1 quart apple ciderIn a large mixing bowl, combine ice cream, butter, butterscotch extract, brown sugar, cinnamon and nutmeg. Pour into freezer safe container and place in freezer. When ready to serve, bring apple cider to a simmer. Place 1 scoop of ice cream in a thick soda glass or large mug. Top with hot apple cider.
