Breakfast Quinoa 2 servings 1/2 C quinoa rinsed 3/4 C lite coconut milk (Trader Joe's) 2 tsp vanilla 1/2 tsp cinnamon pinch of salt fruit & nuts Combine quinoa, coconut milk, vanilla and cinnamon in sauce pan. Bring to boil. Reduce to simmer & cover 15 minutes. Fluff with fork. Load with fruit andnuts and drizzle with coconut milk.
