Meat Ragu - everyone should have one up their sleeve.  This recipe is pretty close to the one I use. Mushrooms are key, either fresh or dried. If dried, I simmer them in the red wine before adding. I usually do not use pancetta and, if it's a special occasion, I will use a mixture of veal and pork instead of beef. I always add a bayleaf, and sometimes substitute nutmeg for thyme. Spaghetti and penne rigate work well with this sauce.

Pappardelle with Red Wine and Meat Ragù

This spectacular pasta dish combines pappardelle (a wide, flat noodle) with a meaty ragu made with red wine, ground beef and turkey and dried porcini mushrooms.

Mediterranean-Style Baked Lima Beans Gluten-Free    calls for soaking your dried lima beans at least 12 hrs. rinse, add water, simmer w bay leaf. In dutch oven heat evoo & minced garlic. add onion. add shredded carrots, then crushed tomatoes, stock, red wine vinegar, tom paste, agave, thyme, oregano, salt, nutmeg. simmer 10 min, add S&P, parsley, mint. Mix in lima beans & bake 30 min...remove lid & bake another 10 minutes to thicken.  Serve on saffron rice:)
