because im addicted - recipe: ricotta & grilled cherry tomato toast

Bruschetta con Pesto, Pomodorini e Burrata - Preheat the oven to 350 degrees. Coat one half loaf Italian or Ciabatta bread with olive oil, then rub with a cut garlic clove. Bake until light golden brown.  Remove from oven and top with your favorite pesto, sliced burrata cheese and cherry tomatoes.  Bake until cheese is melted and tomatoes are slightly roasted.  Slice and serve.

Grilled Zuchinni Pizzas-love the low carb idea

Tonight's Grilled Cheese is literally made On A Grill... The neighbors asked it we had anything we wanted to put on the grill with their stuff (they were just roasting corn), so I took my favorite Black Pumpernickel Bread, spread it with  soft Goat Cheese and Cream Cheese stirred together, and added Petite Diced Tomatoes that were soaked in some Mediterranean Dipping Oil with Basil and Garlic.  Put the lid on until the cheese was gooey and a little bit puffy.  OMG.  SO GOOD.
