watermelon, some Persian cucumbers, a scallion and some feta cheese. Combine it with a little salt, a little pepper, and the ever so delicious trader joes orange muscat champagne vinegar. Let it chill together in the refrigerator and voila!
Autumn Arugula Salad with Caramelized Squash, Spiced Pecans and Pomegranate Ginger Vinaigrette . The caramelized squash and pecans would make a wonderful fall side dish, too. I did use spinach in place of arugula.
Mango Spinach Salad with Honey Lime Dressing: Baby Spinach leaves tossed with slices of fresh mango, cashews, and a homemade Honey Lime Dressing. Add some chicken and cut back on the amount of dressing, and I'd have a full meal!
