Recipe for mini tamale pies from Chow. This recipe calls for ground beef, but I think it'll be super easy to make this recipe vegan or vegetarian. Instead of beef, I may use pinto or black beans. Oh, and I'll use veggie broth for the masa crust instead of chicken broth.

Mini Tamale Pies - gluten free using masa harina! No shortening or lard, but does use vegetable oil. Can be substituted out! Fill with black beans, green chilies, even my Mexican shredded beef or chicken.
