Recipe for mini tamale pies from Chow. This recipe calls for ground beef, but I think it'll be super easy to make this recipe vegan or vegetarian. Instead of beef, I may use pinto or black beans. Oh, and I'll use veggie broth for the masa crust instead of chicken broth.

Mexican Beef and Potato Tacos on BigOven: My original plan for dinner was to make a simple batch of ground beef tacos, served authentic Mexican style. As I was browning the beef I was trying to think of some ways to jazz them up a bit. This is what I came up with.

3-INGREDIENT MEATBALLS ---- combine 1 lb. ground beef, 1 package of Stovetop Stuffing Chicken flavor (uncooked) and 1/3 cup balsamic vinegarette salad dressing.    Mix with your hands and form into balls.  They cook perfectly in mini muffin tins!  Bake at 350 for 20-25 minutes.  Makes 24 meatballs that fit into the mini-muffin tins. ****Pin links to pic only.
