It's asparagus season again!! Love it - especially the green one. The first one for this year I served myself with vegan "parmesan" and caramelized onions and walnuts!

With this recipe I entered a challenge called "Stuttgart Vier mal 3" initiated by three girls from Stuttgart. They chose six different ingredients: swede, lamb's lettuce, dates, bananas, grapefruit and kale. To participate, I was supposed to use at least two of them. I managed to put five of six in one dish ;-) crazy yet delicious combo!
Fennel prepared with coconut milk, pears and cashews. Great combo!
